Tropical Coconut Fruit Pops! #WellnessWednesday

Hello lovely!

How are you doing? I hope you're doing well! For today's #WellnessWednesday recipe I have something really delicious and special! I cannot take all of the credit for this creation. This recipe is one my grandma and I came up with together and it is so good! Not only is it good, but it is (mostly) healthy and it is versatile!

The recipe my grandma and I came up with was spur of the moment and truly was an experiment. It has been hot here in Montana, where I am currently with my grandparents. One of the days I wanted a popsicle and decided I would look to see what we had on hand to make some. Then, my grandma suggested we could try and make an "adult" aka alcohol containing popsicle. So, after some looking around, and combining, and doing a pre-taste test, we decided to give it a go. We were not sure if they would freeze fully since we added Coconut Malibu Rum but they did freeze! Boy oh boy are they quite the treat! You can do these without alcohol too if you'd prefer! Mixing up the fruit could be fun to do too!

Tropical Coconut Fruit Pops!

Ingredients:

1 cup coconut almond milk

1/2 cup Malibu coconut rum or to taste (optional)

Sliced blue berries (optional)

Sliced strawberries (optional)

Lime works well with flavors but is optional.


Directions:

  1. Mix all of your liquid ingredients, including lime juice if adding, in a bowl or container big enough to hold the contents.

  2. In a popsicle mold of your choice, add in your fruits of choice, that is if you aren't using the ones above.

  3. Once the fruits are in the popsicle mold of your choice, add your liquid to your popsicle mold.

  4. Let Freeze for about 24 to 48 hours or just until fully solid.

  5. Enjoy!
